Prime Rib With The Perfect Sauce

A flavorful, juicy prime rib is the star of a holiday dinner. It’s not difficult to make but it looks very impressive. Your guests may think you’ve spent hours preparing it, but in fact, mostly, the oven did the job. Plus, in the end, you’ll find a recipe of sauce that would perfectly complement the prime rib.

Let the rib roast come to room temperature for about 30 minutes. Preheat the oven to 450° F.

Rub all sides of the rib roast with kosher salt and cracked peppercorns. Place on a roasting pan, fat side up.

Cut the top third off head garlic, with top and bottom sides intact. Drizzle the cut sides with oil and put the top back on the bottom. Then wrap it in foil.

Place the rib roast in the oven. Put the garlic on the oven rack, beside the rib roast. Roast them for 20 minutes, then lower the temperature to 350° F. Let the garlic roast for 40 minutes, then remove it from the oven, unwrap and let cool. Roast the beef 1-1/2 hours longer, or until the meat reaches the desired doneness. Insert a thermometer into the thickest part of the meat, not touching bone, to measure its temperature. For medium-rare the temperature should be 110°, for medium — 120°, for medium-well — 130°, for well — 140°. Keep in mind that the meat will continue cooking when it comes out of the oven.

Remove the beef from the oven, cover with foil and let rest for 15-20 minutes. Do not slice it right after removing it from the oven, if you want the meat to be juicy.

Meanwhile, prepare the sauce. Whisk sour cream and heavy cream with wire whisk until soft peaks form. In another small bowl, press roasted garlic from each clove, discard the skin. Add horseradish to garlic and mash together with a fork. Add it into the cream mixture. Stir in 1/4 teaspoon table salt and 1/4 teaspoon freshly ground black pepper. And the sauce is ready.

Slice the rib roast along the ribs to remove them and separate each rib. Slice the roast crossways against the grain. Serve it on a platter with the ribs and don’t forget the sauce.

What can go better with meat than golden and crispy roasted red potatoes? Follow this recipe to make delicious crispy potatoes without burning them.

Arrange racks in the upper and lower thirds of the oven and heat it to 450° F. In a large bowl, toss potatoes with oil, garlic, thyme, salt and pepper until coated.

Arrange in an even layer with the cut side down on two rimmed baking sheets.

Roast potatoes for 25 to 30 minutes, rotating sheets front to back and top to bottom until they become crisp and golden brown on the bottom.

Vegetarian Lasagna With Spinach And Broccoli

Heat the oven to 425° F. Squeeze the excess moisture out of spinach and pat broccoli as dry as possible. Chop them and place them in a large bowl. Add ricotta, garlic, basil, 1 cup mozzarella, and ¼ cup pecorino and mix to combine.

Spread ½ cup marinara on the bottom of the 8-inch square baking dish. Top with 2 noodles. Spread one-third (about ⅓ cup) of the remaining sauce. Then, add one-third (about 1 cup) of ricotta mixture. Repeat. Place 2 noodles on top. Spread with remaining sauce and add remaining ricotta mixture.

Sprinkle ½ cup mozzarella and 2 tbsp pecorino, cover tightly with oiled foil. Bake for 15 minutes. Uncover and bake until noodles are tender and the top is golden brown, for 8 to 10 minutes.

Eggnog is a perfect traditional drink for a family Christmas dinner. And it’s super easy to make! Eggnog is a mixture of beaten egg yolks, cream, and, often, alcohol. Let’s find out how to make the ideal eggnog.

Take a small saucepan and combine milk, cinnamon, nutmeg, and vanilla over low heat. Slowly, bring the mixture to a low boil.

Then take a large bowl and whisk egg yolks with sugar until yolks become pale. Slowly add the mixture, prepared in the previous step, to temper the eggs and whisk until combined.

Return the mixture to the saucepan and cook over medium heat, until it becomes slightly thick (and coats the back of a spoon) but does not boil.

Then, remove it from heat and stir in heavy cream and, if you want to, bourbon. It’s not necessary to use alcohol, it would just make the eggnog boozy. After adding the heavy cream, refrigerate until chilled.

To serve, add whipped cream and cinnamon.

If you’re serving it that day, you can store the eggnog in a pitcher in an ice bucket to keep it chilled. If you want to prepare it 1-2 days before, it’s still possible to keep it chilled. Simply store it in an airtight container in the fridge, and the eggnog can last up to 4 days!

Take a large bowl and hand mixer to beat butter, brown sugar, and molasses until fluffy, about 2 minutes. Then add egg and vanilla and beat until combined.

In a medium bowl, whisk flour, spices, baking soda, and salt until combined. Gradually add dry ingredients to wet ingredients, using the mixer on low, also add fresh ginger, orange zest, and black pepper (if using), until dough just comes together.

Divide the dough into 2 halves and create two discs. Wrap each in plastic wrap and chill until firm, about 2-3 hours.

Preheat the oven to 350° F. Prepare the baking sheets, line them with parchment paper. Take one of the discs of dough and place it on a lightly floured surface. Roll until 1/4″ thick. Cut out gingerbread men with a 3″ wide cutter and put them on baking sheets.

Bake until slightly puffed and set for 9-10 minutes, depending on the size of your cookie cutters. Let them cool on baking sheets for 5 minutes before placing them on a cooling rack to cool completely.

Do the same with the other disc of dough. Decorate with sprinkles and icing as desired.

Bûche de Noël (Yule Log Cake)

Baking a Bûche de Noël cake is a French Christmas tradition that dates back to the 19th century. Don’t worry, it’s not hard to make, you just need to pay attention to details so as not to overbake it.


Preheat the oven to 350° F. Prepare a jelly roll pan, line it with parchment paper and grease with cooking spray. In a medium bowl mix together flour, cocoa powder, and salt.

Take a large bowl and beat egg yolks until they become thick. Gradually add ½ cup sugar and beat until it becomes pale. Then beat in the flour mixture.

Take another large bowl and beat egg whites until soft peaks form. Gradually add the remaining ¼ cup sugar and beat until stiff peaks form. Gently fold egg whites into batter in two batches.

Spread the batter into an even layer on the prepared pan. Bake for about 12 minutes, until the top springs back when lightly pressed.

Take a clean kitchen towel and dust it with powdered sugar. Invert the warm cake onto towel and peel off the parchment. Use the towel to tightly roll the cake into a log. Start with the short end. Let it cool completely.

Meanwhile, prepare the filling. If you’re using gelatin, place 2 tablespoons of cold water in a shallow microwave-safe bowl and sprinkle gelatin in an even layer on top. Let it bloom for 5-10 minutes, then microwave for 10 seconds until gelatin is runny. Be careful not to overheat it.

Take a large bowl and beat together heavy cream, powdered sugar, pure vanilla extract, and a pinch of salt, until medium peaks form. Then, if you’re using gelatin, strain and stream it into whipped cream while continuing to beat the cream. Put in the refrigerator until ready to use.

When the cake is cool, unroll and evenly spread the filling over it. Using the towel, roll the cake back into a roll. Place it with the seam down on a baking sheet and refrigerate for about 1 hour, until well chilled.

Then make the frosting. In a large bowl beat the butter until it becomes smooth. Add powdered sugar and cocoa powder to it and beat until no lumps remain. Then add vanilla, heavy cream, and salt.

To serve, trim ends and frost cake with chocolate buttercream. Dust lightly with powdered sugar and decorate with chocolate curls. Then, place cranberries and rosemary on the log to create mistletoe.
